Are baby carrots the veal of the plant kingdom? I’ve been bothered by this everytime I see them on the salad bar — Why are these carrots denied their full growth potential?

Matt… at one time, “baby” carrots were actually young, tender carrots. But for as long as I’ve been noticing, “baby” carrots are just big carrots that have been cut-down to nubbins. I assume (or is it “I pray”) that the scraps are used for something else… maybe even something edible!
